Ingredients:
• cassava or yuca [4 ¾ cups total if grated]
• 1 ½ cups brown sugar
Scrape or grate the cassava. Squeeze a little to remove some juices. Set aside the juice for 30 minutes. Separate the starch from the juice, discard the juice. Add the starch to the grated cassava. Add sugar and jackfruit strips if desired, optional [x]...
Mix until the sugar dissolves and well blended.
Soak the banana leaves in boiling water to soften.
Dry or wipe. Lay out the banana leaves and scoop the cassava mixture according to the desired amount. [This one I made is about 6 more tablespoons].
Place in a saucepan and add water to cover the suman. Boil for 50 minutes to 1 hour. Let cool.
