Can rice flour be used as a substitute for wheat flour in traditional recipes?

Normally, you can't use rice flour instead of wheat flour.

But rice flour doesn't contain gluten. Rice flour may be a good choice if you are looking for gluten-free ingredients.

The biggest difference between rice flour and flour is whether or not they contain gluten. Gluten is a protein that is formed by adding water and kneading, which gives it a unique resilience and elasticity. Flour contains gluten, but rice flour does not.
