Gothic cathedrals were originally neither covered in soot nor gleaming white. They were painted in bright colours, like the temples of many other religions. Amiens Cathedral today…

Cathedral interiors were similarly colourful.
So, there was nothing “totally unchanged” about Notre Dame before the fire. And the new white will soon start turning beige, then brown, then (if left to its own devices) a greyish black, because we're polluters and destroyers of air.
