I’ve eaten squid a lot of times. I find the meat rather rubbery and unpleasant, not unlike the meat of lizard — I once ate a skewer of grilled lizard meat. The spices made it decent but the texture was genuinely awful. Very chewy, not at all soft and not overly flavorful on its own unless dipped in a sauce sold alongside of it.
Shark, I’ve eaten — sharkfin soup, to be exact. You can get it in China, the real deal is pretty damn great, although the fin of a shark is mostly just cartilage, cooked for ages to soften it up. Cartilage doesn’t have all that much flavor in and of itself, so it’s the broth that brings the flavor. The actual meat of a shark can be eaten, too, but it has an extremely foul taste and smell as sharks do not pee the regular way; they secrete urine through their skin, and as a result their entire body smells like ammonia when cooked. The Chinese who prepare the dish usually cut off the fins and throw the entire shark’s body into the ocean, wasting it. I avoid the dish as a result.
The one I haven’t eaten is alligator. If it tastes anything like a lizard, I pass. But I have heard it tastes pretty decent. Kinda like chicken, only a bit more firm and very low fat. It’s on my to-eat bucket list, for sure.
