Bologna is a city in Italy, Emilia-Romagna region, with a population of 388,000 and a rich history. Its origins go back to the 11th century BC. In 189 BC, it became a Roman colony and was renamed Bononia which later became Bologna.

Bologna is the home of the world’s oldest university which was founded in 1088 A.D. (I mean a real university, not a religious school.)

Bologna also has rich culinary tradition and is nicknamed “city of food”. Typical food items from Bologna include:

  • tagliatelle, ribbon noodles with eggs
  • tortellini, stuffed noodles
  • ragù alla bolognese, a sauce with meat and vegetables, eaten with tagliatelle, lasagne or cannelonni
  • lasagne verdi alla bolognese, sheet noodles with ragù
  • mortadella di Bologna, a sausage
  • cotoletta alla bolognese, veal cutlet
  • bollito misto, mixed meats and sausages, served with green herb sauce
  • zuppa inglese, a kind of custard with sponge cake
  • crema di mascarpone, sweetened cream from mascarpone, a kind of ultra-rich cream

Many dishes are called “alla bolognese”, in English “Bologna-style” because they have been invented in Bologna.
