Limited experience in French food, therefore unable to zero in on "favourites". However the few traditional dishes that I have enjoyed in the past top the ‘good-eating’ list.
Tarte Tatin: caramelized apple tart that is baked with pastry on top and then inverted for serving.
The roots of French onion soup are in the broths of ancient Rome.
Ratatouille: ate it several times prepared by a Swiss-French, without knowing what's it called.
Quiche Lorraine: tart with a filling of cream, eggs, and bacon, made into a savoury custard.
Boeuf Bourguignon: the beef is prepared with a Burgundian sauce with mushrooms and small onions.
