How do you create delicious pasta dishes when your pantry is nearly empty?

One specific dish comes to mind, pasta with tuna. As there is always some toothpaste left in the tube, there is always a can of tuna hidden somewhere in the pantry. And much more than that is not needed to make an excellent pasta dish.

A ( even shrivelled) clove of garlic, a splash of olive oil, some parsley and any kind of pasta. Depending on what’s left in the fridge of panty, you enrich that dish. Bottarga, lemon zest, cherry tomatoes and so on.

A more regional dish (Sicilian) deserves a mentioning: pasta with anchovy and toasted breadcrumbs.

After frying a clove of garlic in olive oil and then removing it, add some anchovy fillets and let them dissolve. Add a ladle of the water your pasta is boiling in. In a separate pan toast breadcrumbs in olive oil. Add the pasta to the anchovy and mix the breadcrumbs in.

Both dishes have no place on the menu of restaurants, they are eaten at home. Hence they are quite unknown abroad. Give them a chance, you won’t regret them.
