Why is it true that pasta was invented in China?

It is not true.

In 2005, a Chinese scientist claimed that he had excavated 4,000-year-old noodles which look like this:

An he claimed that the Chinese had “invented” pasta.

However, further research proved that these worm-like structures were made from millet, but that you cannot make noodles from pure millet.

So, the Chinese-origin theory has widely collapsed.

It is also wrong that Marco Polo brought the noodles from China to Italy. Italian pasta are much older.

In the 2nd century, the Greek physician Galen described a homogenous mixture of flour and water called itrion. Itrion was also mentioned in other source and there is no doubt that string-like noodles were made of this dough, they were dried and later cooked in water. This is described by the Arabic physician Isho bar Ali in the 9th century.

So, pasta originated in the Mediterranean region, independently from China.
