There are a couple of ways to obtain creaminess when it comes to pasta dishes.
- Cream without cream
Most vegetables can be blended, after having being boiled of steamed, into a cream. Just add some olive oil, some water your pasta boiled in and grated cheese. You will end up with a cream that coats your pasta. The photo underneath features zucchini cream
- Emulsifying
Adding some pasta water and fat (butter or olive oil) to your pasta once it is off the stove, helps you to emulsify and obtain creamy pasta
The reason few Italian pasta dishes feature cream is because the latter tends to cover all the other flavours.
